Pastrami Fried Rice

A delicious twist to regular fried rice

3 C white rice
6 C water
2 t salt
4 eggs
5 scallions, finely chopped
2 cloves garlic
12 oz. pastrami
3 T soy sauce

Cook rice in water and salt. In a large wok, fry eggs in oil, mixing constantly with a fork until the eggs are finely chopped. Add scallions and garlic, and saute 2 minutes. Add pastrami and saute another 2 minutes. Raise the flame to medium-high and slowly add cooked rice to the wok, mixing constantly. Fry for 5-7 minutes, mixing every 30 seconds or so to avoid burning. Lower heat and add soy sauce. Mix again for 2-3 minutes then remove from heat. Garnish with scallions and chives.
